OWNER OF ADELPHOS COFFEE ROASTERS
When Keenan Laymon first fell in love with coffee, he wasn't planning to open one of the most distinctive coffee shops in Corpus Christi.
After years working in Austin's specialty coffee industry, Keenan helped manage multiple cafés and eventually became heavily involved in an award-winning coffee roastery. The experience gave him a deep appreciation for the craft behind every cup, from sourcing beans and roasting coffee to educating customers about flavor profiles and brewing methods. But despite finding success in Austin, he and his wife, Genevieve, felt called back to the Coastal Bend.
The couple had met while attending college in Corpus Christi and saw an opportunity to introduce a different style of coffee experience to a city they already loved. Rather than opening another café in an already crowded market, they wanted to help grow specialty coffee culture in Corpus Christi while creating a space where people could gather and connect. That vision eventually became Adelphos Coffee Roasters, a local coffee shop built on quality coffee, community, and meaningful conversation.

What Makes Adelphos Coffee Roasters Different?
Adelphos Coffee Roasters specializes in third-wave coffee, an approach that focuses on the quality, sourcing, and flavor profile of the coffee bean itself. When Adelphos first opened, specialty third-wave coffee was still largely absent from the Corpus Christi coffee scene. Keenan saw an opportunity to introduce a style of coffee culture that had already gained popularity in cities like Austin, Houston, and San Antonio. Rather than covering coffee with excessive sweeteners and toppings, Keenan's goal is to showcase the flavors developed through careful farming, roasting, and brewing. Many of Adelphos' coffees feature tasting notes similar to what wine enthusiasts might experience when sampling different varietals. The shop also creates its own house-made syrups and rotates seasonal offerings throughout the year, giving guests the option to enjoy either a carefully crafted specialty coffee or a more familiar flavored beverage.

From Coffee Trailer to Downtown Corpus Christi
Adelphos began as a coffee trailer located off Everhart Road. Keenan and Genevieve relocated to Corpus Christi, welcomed a new baby, and launched the business all within the same month.Through word of mouth and a growing interest in specialty coffee, the trailer became a regular stop for residents eager to try something different. The trailer remains open today and continues serving as a neighborhood gathering place. For many customers, it was their first introduction to specialty coffee and the community-focused approach that would later define Adelphos. As the business grew, an opportunity arose to expand into a brick-and-mortar location inside The Foundry in downtown Corpus Christi. The space gave Adelphos room to grow while creating a destination where visitors could work remotely, meet friends, study, or simply enjoy a cup of coffee in a thoughtfully designed environment.
Creating Community Through Coffee
While coffee may be what brings people through the door, community is what keeps them coming back. Keenan describes Adelphos as more than a coffee shop. From community markets and movie nights to gathering spaces for families, students, and professionals, the business continues to invest in creating opportunities for connection. The recently expanded third-floor seating area at The Foundry provides additional space for guests looking for a quiet place to work, read, or spend time with friends.

What's Next for Adelphos Coffee Roasters?
For Keenan and Genevieve, there are plenty of ideas brewing for the future of Adelphos Coffee Roasters. While the business continues to grow, one exciting development already taking shape is bringing coffee roasting operations directly to Corpus Christi. As a roaster at heart, Keenan sees it as a natural next step in Adelphos' journey and another way to continue sharing specialty coffee with the community. He has long envisioned roasting coffee locally and continuing to grow Adelphos' impact within Corpus Christi. While the company continues to evolve, its mission remains the same: serving exceptional coffee while creating spaces where people can gather, connect, and feel at home.
